Microwave Chocolate Mug Brownie

You know those days?  The ones where you wish you wouldn't have gotten out of bed?  Maybe you spilled your coffee (or more likely your dog, cat or child spilled your coffee...maybe even ON you...is there anything worse?), maybe you realized after you told your kids you were going to make pancakes for breakfast that you were out of eggs and couldn't make them.  Then, of course, they cried and were grumpy all morning.  Maybe it was just a day of too much running, or too much cooking in a hot kitchen, too much cleaning or too much poop!  Diapers, cat litter, potty training puppies and children...do we ever catch a break?


Anyway, you know the days I'm talking about...those days.  This is a recipe for those days.  It's quick, easy, convenient, and oh-so comforting.  It's not exactly what I had in mind for this Mommy Recipe page, but I think it fits perfectly for when us Mommies need a little pick-me-up after our little darlings are in bed for the night.




My cousin, who is a budding crochet designer and DIY Bride, posted this recipe on facebook one day.  I'm not sure if I love her for it, or hate her for it, because it's so good I want to make it all the time!  Which I wouldn't recommend doing if you're watching your weight.  You can find the recipe here or here:


Microwave Chocolate Mug Brownies
     -bring on the chocolaty goodness!


2 Tbsp melted butter
2 Tbsp water
1/4 tsp vanilla
1 dash o' salt
4 Tbsp sugar
2 Tbsp cocoa powder
4 Tbsp flour


Melt butter in a coffee cup.  Add water, vanilla and salt.  Stir.  Add sugar and cocoa.  Stir.  Add flour.  Stir.  Microwave for 60-90 seconds, depending on how molten you want it on the inside.  Fewer seconds = more gooey goodness.

My Dandelion Jelly Recipe


This is my recipe, slightly adapted from this one.

Dandelion Jelly
yields 13 half-pint jars

2 qt (8 cups) slightly packed dandelion flowers - no greens!
4 Tbsp lemon juice
10 cups sugar
3 oz. dry "classic" pectin

*Boil flowers in 2 quarts water for 10 minutes.  
*Strain, pressing out all liquid.  Then re-strain through a coffee filter.
*Measure 6 cups of the liquid.  Add lemon juice, pectin and yellow food coloring.
*Put into deep (it will bubble up a lot when boiling) pot and bring to a boil.  Add sugar and stir to mix well.
*Bring mixture up to a rolling boil and boil for 1 1/2 minutes.  Skim.
*Pour into hot, clean, half-pint jars and seal.
